Violet Robinson Cookies

aka Chocolate Macaroon Cookies

For today’s installment of Yom Revi’i Recipe, we have a special dessert that brings up a lot of memories from my childhood. My grandmother used to make these easy to make, yet super tasty treats for me and my sisters growing up. The top of my grandma’s recipe card reads Violet Robinson Cookies, after the lady that she inherited the recipe from, but we knew them as chocolate macaroon cookies. We used to line up, single file, taking turns eating the ‘droppings’ that fell as my grandmother spooned out the cookies onto the wax paper.

Ingredients:

1/2 cup butter
2 cups sugar
1/2 cup milk
6 tbsp cocoa
3 cups oats
4 oz. shredded coconut

Directions:

Mix the first 4 ingredients in large pot and heat on low until it bubbles.

Remove from the heat and add the oatmeal and coconut.

Mix well and drop on parchment or wax paper to cool.

Once cool, the cookies will harden.

This process can be quickened if put in the fridge.
